This is so simple I can't stand it. And I'm disappointed I waited until I was in my mid-40's to figure it out; but Sweet Potatoes are indeed the ideal side dish, Bot Yams....but regular, boring old Sweet Potatoes.
And...it's good for you too!! Nutritionally, sweet potatoes are an excellent source of vitamin A and a good source of potassium and vitamin C, B6, riboflavin, copper, pantothetic acid and folic acid.
Now, before you go screaming off into the world of the internet vowing never to read anything this idiot posts again....just try this once. If you don't agree, then fine....GO!
BUT....stick around and I think you'll be thrilled with me.
First, all you need is 3 - 4 medium sweet potatoes, Olive Oil, Salt and Pepper and a metal cookie pan. Metal works better for the end result because it heats differently than Pirex.
Peel the Sweet Potatoes and dice into 1/2" cubes. In a large bowl toss the cubes with 1/4 cup of Olive Oil and leave in bowl for about 10 minutes. Toss again and lay them out in a single layer on the cookie sheet. Spray them lightly with a non-stick spray and add Salt and Pepper until lightly coated.
In a pre-heated oven, roast the cubes at 350 degrees for 45 - 60 minutes, or until the bottom side of the cubes caramelize. You'll find these little nuggets to be tender, candy-like and gone before you know it - so make more than you think you'll need
Remove and serve with.....well, ANYTHING!!

Garlic Powder or Granulated Garlic
Chili Powder or Cayenne Pepper
